Our relationship with Fiesta Acapulco began a few years ago in a rather memorable way. During a busy Cinco de Mayo celebration, the restaurant experienced a significant restroom clog that rendered the ladies’ room unusable. That Plumber was called in, and Pat, our on-call technician, responded without delay to address the problem. When Fiesta Acapulco began preparing their new location in Wadsworth, they reached out to That Plumber to assist with a key component of the build-out: reconfiguring the dish room. This space needed to be both highly functional and compliant with health and safety regulations to support the demands of a high-volume kitchen. The project involved:

To support the new layout, we began by excavating the existing concrete and rerouting the drain lines. We then installed a larger grease interceptor system capable of handling the output of a busy commercial kitchen. These systems are essential in restaurant environments to capture fats, oils, and grease before they enter the municipal sewer system, preventing backups and ensuring code compliance.
We installed multiple floor sinks, which serve as oversized floor drains designed to receive wastewater from the sink and dishwasher through an airgap. This configuration provides protection against contamination in the event of a backup. Each floor sink was connected to the upgraded grease interceptor to ensure full functionality and compliance with health codes. After passing inspection, the concrete floor was restored.
Once the infrastructure was in place, we installed and connected a three-bay commercial sink and high-capacity dishwasher. Upon successful final inspection, the restaurant team completed the flooring and brought the kitchen into full operation, on schedule and without plumbing concerns.
